Homemade Master Baking Mix

9 cups sorted all-purpose flour 1/3 cup baking powder 1 tablespoon salt 2 teaspoons cream of tartar 4 tablespoons granulated sugar 2 1/2 cups nonfat dry milk 2 cups shortening not needing refrigeration (such as Crisco).Sift thoroughly the flour, baking powder, salt, cream of tartar, sugar and dry milk. Cut in the shortening with a food processor or pastry blade until the mixture is well blended. Store in a dry location in an airtight container. Don't freeze.

This recipe will result in a homemade baking mix that is very similar to Bisquick or other packaged mixes, but without any preservatives. When measuring any dry mix such as this, fill the measuring cup and clean off the top with a flat blade like a knife.

Biscuits.

Preheat oven to 450 degrees F. Combine 1 1/2 cups Master Baking Mix and 1/3 cup milk in a bowl. Include milk all at once, stirring 25 strokes. Knead gently on floured board. Roll 1/2-inch thick; cut and put on ungreased baking sheet. Bake 10 minutes. Makes 8. Alternatives: Add grated cheese, chopped herbs. Increase milk to 1/2 cup for drop biscuits. Usage as a topping on casseroles, cobblers or meat and vegetable pies.

Muffins.

Preheat oven to 425 degrees F. Beat together in a bowl 1 egg, 1 cup milk and 2 tablespoons sugar. Include 3 cups Master Baking Mix. Choices: Add drained fruit, sliced nuts or sliced dried fruit. Replace 1/3 cup of Master Baking Mix required with quick-cooking oatmeal or All-Bran cereal. Add chopped dried fruit and nuts to dish and bake as a fruit bread in a greased 8 x 5-inch loaf pan. Bake 40 minutes at 350 degrees F. making pancakes

Use This Mix For Outstanding Pancakes

Pancakes or Waffles. Beat together 1 cup milk and 1 egg. Stir in 1 1/2 cups Master Baking Mix. Bake on hot frying pan or waffle iron. For lighter waffles, separate egg; include yolk with milk. Beat egg white till stiff, and fold into batter just before baking. Boost milk for thinner batter, if desired.Cornbread. Preheat oven to 400 degrees F. Stir together 1 1/2 cups Master Baking Mix, 1/2 teaspoon salt, 1 teaspoon chili powder (optional), 2 tablespoons sugar and 3/4 cup cornmeal. Combine in a different bowl 1 egg, 1 cup cream-style corn and 3/4 cup milk. Stir liquids into dry ingredients simply up until flour is all moistened; put into greased 9-inch square pan and bake 20 to 25 minutes.

Options: Add 1/4 cup sliced green pepper. For crispy topping, spray on 1/2 cup grated cheese and 2 tablespoons sesame seed prior to baking.  Dumplings.

Add 1/3 cup water to 1 cup Master Baking Mix and blend till smooth. Drop into hot meat stock and cook 10 minutes, exposed, and 10 minutes, covered.

Yellow Cake.

Sort together in a large bowl 3 cups Master Baking Mix and 1Â 1/4 cups sugar. Mix together in a little bowl 2 a little beaten eggs, 1 cup water and 1 teaspoon vanilla extract. Add 2/3 of liquid to dry active ingredients. Beat at high speed for 2 minutes. Add remaining beat and liquid 2 minutes longer. Grease a 9-inch square pan. Bake at 350 degrees F for 25 minutes. Frost or sprinkle confectioners' sugar over the top. chocolate cake

Chocolate Cake.

Sort together in a large bowl 3 cups Master Baking Mix, 1Â 1/2 cups sugar and 1/2 cup cocoa powder. Mix together in a little bowl 2 a little beaten eggs, 1 cup water and 1 teaspoon vanilla extract. Bake at 350 degrees F for 25 minutes. You will end up with a great chocolate cake!

Coffee Cake.

Preheat oven to 375 degrees F. Beat together in a bowl 1/3 cup milk and 1 egg. Include 1/4 cup sugar and 2 1/4 cups Master Baking Mix. Stir until well combined, about one minute. Put into a greased 8-inch square baking pan. Combine 1/2 cup brown sugar, 1/2 teaspoon cinnamon, 3 tablespoons margarine and 1/4 cup sliced nuts and sprinkle over the top. Bake 25 minutes. Serve warm.

Pineapple Upside-Down Cake.

Preheat oven to 350 degrees F. Melt 2 tablespoons margarine in a baking pan. Include 1/2 cup brown sugar to margarine; store and spread. Location 2 cups canned, drained pipes pineapple on top of brown sugar and margarine. Stir 2 cups Master Baking Mix and 1/2 cup sugar together in a bowl. Add 1 egg and 1 cup water to mix and beat. Pour into pan and spread over fruit. Bake 1 hour. Remove from pan; cut into pieces. Serve upside down; fruit will be on top.

Oatmeal Cookies.

Place 2 1/4 cups Master Baking Mix in a bowl. Combine 1/3 cup milk, 2 beaten eggs and 1/2 cup melted reducing. Include 3 cups oatmeal and mix.

Peanut Butter Cookies.

Stir 1 1/3 cups sugar, 2 beaten eggs and 1 cup peanut butter into 3Â 1/2 cups Master Baking Mix up until well blended. Usage fingers to assist in blending. Roll dough into balls; put on baking sheets and flatten by making crisscross designs with a fork on the tops of the cookies. Bake at 375 degrees F for about 10 minutes.

Sunday Bread.

Integrate 2 cups Master Baking Mix, 1 cup oatmeal, 3/4 cup sugar, 1 teaspoon baking powder, 1/4 teaspoon salt and 1/2 cup raisins. Beat 1 egg and 1 1/4 cups milk together. Add to dry mix and beat tough for 30 seconds. Pour into a greased, 1 1/2- quart casserole. Bake at 325 degrees F for 1 hour and 10 minutes. End up onto rack to cool. When cool, wrap and store for a day for best slicing.

Onion-Cheese Bread.

Preheat oven to 400 degrees F. Combine in a blending bowl 2 cups Master Baking Mix, 1/2 cup cold water and 1 tablespoon minced onion. Blend in 3/4 cup shredded sharp cheese.
